Microwave Caramel Popcorn

🥘 Ingredients

  • baking soda
    1/4 tsp
  • brown sugar
    1/2 c
  • butter
    4 tbsp
  • popcorn (popped)
    4 tbsp
  • salt
    1/4 tsp
  • vanilla extract
    1 tsp
  • white Karo syrup
    2 tbsp

  • heatproof microwaveable container

    Add brown sugar , white Karo syrup , butter , and salt to a heatproof microwaveable container that has room for the mixture to triple in size.
    brown sugar: 1/2 c, white Karo syrup: 2 tbsp, butter: 4 tbsp, salt: 1/4 tsp

    Microwave for ⏱️ 40 seconds , then remove and stir. This just gets the butter melted and everything combined. Microwave for ⏱️ 1 minute . Stir. Microwave for an additional ⏱️ 1 minute . This is when it gets really big.

    Remove from microwave and stir down. Add vanilla extract and baking soda and stir until it stops fizzing and bubbling.
    vanilla extract: 1 tsp, baking soda: 1/4 tsp

    Pour over popcorn and gently fold until well coated. Let cool in a bowl or on parchment paper.
    popcorn: 4 tbsp (popped)

    These times produce soft caramel (milk caramel consistency) in my microwave.
